Yuca

Scientific name: Manihot esculenta

Cassava has a delicious flavor, is rich in carbohydrates and a good source of energy. It is low in protein and fat. It also contains vitamin C, thiamine, riboflavin and minerals such as calcium, phosphorus and potassium.

It is a very versatile ingredient in Peruvian gastronomy. It is used in dishes such as carapulcra, fried yucca, pork rinds with yucca, and meat stew.
